Pumpkin Breakfast Cake (adapted from carascravings.com)

143 calories, 15g carbs, 2g fat, 19g protein.

(Topped with light whipped cream, one teaspoon melted peanut butter, one tablespoon shredded coconut, and one tablespoon homemade pumpkin butter)

1/4 cup liquid egg whites

1/2 cup canned pumpkin

1/2 scoop vanilla whey protein powder

Pumpkin pie spice (optional)

Truvia and cinnamon to taste

Mix or blend all ingredients well, pour in a bowl and microwave for one to two minutes, until cake puffs up. Top with melted peanut butter or any other toppings you may like :)
